Entering the contest trailing Colorado by 58 points in the standings, Vancouver stunned the home crowd early with three goals in the first 11:38, setting an aggressive tone.
Marcus Pettersson scored the go-ahead goal with 5:39 remaining, and Boeser sealed the victory with an empty-netter after Colorado rallied to tie the game 6-6.
Colorado goaltender MacKenzie Blackwood was pulled during the second period after allowing six goals on 19 shots, while Nathan MacKinnon reached his 50th goal of the season.
The Canucks head to Minnesota on Thursday to continue their road trip, while the Avalanche travel to Dallas on Saturday to resume their season.
